Happy Thanksgiving

Alot has happened the last year.  My health has deteriorated greately, and with very little or no support, I needed to close down the Association.  I didn't want to, but I needed to.   So now, here it is a few days from Thanksgiving and I still have a storage unit of Cookbooks that needs to be sold.  So I'm hoping my friends out there will help me so I can empty out of my office and storage unt. 

We are still selling them for the small amount of $14.00 plus s&h to make sure we meet the demands of the publisher.   We really need your support on this and help us.

These are also great for Christmas gifts with lots of delicious recipes.

Recipes for Our Son's

We are delighted to introduce the RECIPES FOR OUR SON'S cookbook to help benefit muscular dystrophy.  This is NOT a vegetarian/vegan cookbook, but it is compiled by family and friends to benefit our boys affected by muscular dystrophy.

Delightful Spring Recipes

Well I'm here...it has been quite a  new year so far. Right now here in Florida, although alot of rain, still pretty hot!

As you know with it being officially spring, there are alot of delightful spring healthy recipes to try out.  This year, I did get quite a few strawberries...as I love strawberries!!  I have been making alot of strawberry smoothies too.

Stawberry Smoothie 

2 banana's, chopped
2 tsp honey
2 cups milk or fruit juice
3 Tbsp Yogurt
2 cups fresh strawberries 
1 cup ice


Blend together, serve cold.

Nuteena

I'm sorry I have not posted any new recipes on here. I've been in the hospital to have surgery and the recovery process has taken longer than expected, then Tim was in ICU with a collapse lung.

But a few weeks ago, I had this terrible craving for NUTEENA. It is one of the most delicious sandwich spreads I ever had.  We talked about it on Face book and I decided to share the recipe here with you even if it is not in the cookbook. But you surely can print this up and added to our cookbook if you so desire.

Now that Nuteena is no longer available, here’s a recipe that just might fill the void.


2 cups tomato juice
3 cups potato water or water
½ cup cornmeal
1½ cups peanut butter


or


1 cup peanuts blended smooth and ½ cup peanuts partially blended
2 tablespoons oil
1 tablespoon soy sauce
1 teaspoon salt (or to taste if you use peanut butter)
½ teaspoon poultry seasoning or sage
½ teaspoon garlic powder
1 tablespoon Lawry’s seasoned salt
½ cup gluten or whole-wheat flour or ¼ cup each
2 cups rolled oats
1½ cups bread crumbs


Microwave method:


Mix first 11 ingredients (through gluten) in blender until smooth. Pour in large bowl. Add oats and bread crumbs.


Grease two 9¼x5¼x2½-inch glass baking pans. Put 4 cups mixture in each pan.


Bake 1 loaf at a time in microwave. Bake 4 minutes. Stir outside edges into middle. Repeat at 8 minutes; then bake till firm but not dry (2 to 4 minutes). Nuteena will get firmer when cool. Glass dish: cut in 12 slices, then cut slices in half (24 squares).
48 (2x2-inch) slices

Steam method:


fill 5 cans (2½-cup size), greased, with 1¾ cups batter. Place in kettle on a rack. Put in enough water to come ¼ way up side of can. Cover with lid.


steam 1 to 1½ hours (or until firm). 5 cans: 12 slices per can.

Happy Thanksgiving!

Today, we have a lot to be thankful for.  We are breathinng fresh (cold) air. We have family and friends. We have a wonderful God who has provided us with a lot!   

Here is a few of our favorite Thanksgiving specials from our Cookbook. Have a wonderful day!

Bread Stuffing

6 cups Bread Crumbs
1/2 cup Dried Cranberries
1/2 cup Onions, chopped
1/2 cub Celery, chopped
1/2 cup Mushrooms, chopped
3/4 cup Pecans, chopped (or walnuts or almonds)
1 cup Margarine (melted)  (or oil)
1 cup Water (warm)
1 envelope Lipton Herb with Garlic soup mix

Pre-heat oven at 350 degrees. Mix all ingredients together. you may place in dish.  Back for up to 30 minutes.

Bread Dressing

2 cups Bread Crumbs
1/2 cup Dry Burger (already soaked)
1 cup Onions, chopped
2 stalks Celery, chopped
2 cups Water
1 Tbsp Oil
2 Tbsp Soy Sauce
1/2 tsp Oregano
1/4 tsp Basil
1/4 tsp  italian Seasoning
1 Tbsp Chicken Seasoning
dash- Sage

Moisten first four (4) ingredients with 1 1/2 cups of water. Add rest of ingredients. Bake at 375 degrees for 30-40 minutes.

The Awarding Sweet Recipe

I had been looking for a recipe for years.  It was one I had cooked when working as a cook at a hospital in the early 80's.   I had even been at the hospital in 2007 and asked them for the recipe but no one knew about it or where it was.  I was so upset.  So when creating the cookbook I had to guess what it was, not knowing what all the secret ingredients were.   

Sweet Lentil Loaf.

It is one of the most delicious vegetarian recipes I have ever tasted.   You have to try it.  It will be one you will never forget.    It is the most rewarding recipe to taste that really it does deserve an award for it. 

Whether you are vegetarian or not, it is a recipe to die for.   I'm serious.  I could not believe it when I first tasted it.  I don't know who originally created the recipe but they do deserve that award!  

Here is the delighted but the most delicious recipe you can eat!

Sweet Lentil Loaf

1 1/4 cups dry lentils
2 1/2 cups water
1/4 cup dry onion flakes
1/4 cup pitted dates
1/2 cup whole wheat flour
2 tsp chicken seasoning
1 tsp salt
2 cups soft bread crumbs
1/2 tsp garlic powder
1/2 cup milk (skim)
1/2 cup tomato puree
1 4oz can mushroms pieces

Cook lentils in covered pan with water and salt for 45 minutes. Put in mixing bowl and add bread crumbs and onion. Whiz remaining ingredients (except mushrooms) until smooth. Add mushrooms with liquids and whiz just enough to cut mushrooms into pieces. Add to lentil mixture and mix.  Put in oil-rubbed 1 1/2 gal casserole or 8x8 baking dish. Bake in preheat oven of 350 degrees for 1 hour.  Garnish with pimento, parsely or tomatoe wedges.
